This is one of my go-to breakfast meal ideas. High protein breakfast is one of the best things we can do to set ourselves up for success for the day. When we eat a high protein breakfast, we balance our blood sugars and naturally make better food choices for the rest of the day. Foods that lower blood sugar have a significant amount of protein and/or fiber. This breakfast has about 25 grams of protein.

INGREDIENTS
2 almond flour tortillas (my favorite brand here)
2 Eggs
¼ cup Crumbled feta/Shredded parmesan/Shredded cheddar Cheese
Everything bagel seasoning
Optional: butter beans or refried beans (adds extra protein and fiber), hummus, chimichurri, chili oil, avocado, herbs, tomato
METHOD
- Warm the tortillas in a pan for 1-2 min on each side, then remove.
- Heat a non-stick skillet to medium/high heat and spray with cooking oil or olive oil
- Sprinkle cheese in a circle in the warm skillet, then crack an egg into the center of the cheese. Season with everything bagel seasoning and cover.
- Cook 3-5 min depending on how runny you like the yolk.
- Transfer the cheesy egg to the tortilla with a spatula. Option to top with herbs, avocado or tomato.
