My kids absolutely love this oatmeal. What we love about it is that it’s nutritionally dense. And since it gets a richer texture and flavor by adding egg and butter/coconut oil, you don’t need to sweeten this much. The banana and protein powder add the perfect amount of sweetness. The protein from the egg, protein powder and chia seeds as well as the fat from the butter/coconut oil slow down sugar absorption, which is so important in the first meal of the day. This oatmeal sets up my kids for a successful day. We know you’ll enjoy this as much as we do!
INGREDIENTS
1 cup water
½ cup whole milk (can also use coconut, almond etc)
1 cup organic oats (I used One Degree GF Organic)
1 pasture-raised egg
1 Tbsp butter (preferably grass fed) or coconut oil
Pinch of high quality salt
1 mashed banana
½ scoop clean protein powder (i use just ingredients)
¼ cup chia seeds
METHOD
- Cook the oatmeal in the water and milk in a pot over medium heat. Simmer, covered for 8-10 min or until the liquid is mostly absorbed.
- Turn off the heat and add the egg. Mix well and stir for a minute to make sure the egg doesn’t cook too much in one spot.
- Add butter and salt and mix. Add mashed banana, protein powder and chia seeds and mix well.
Notes:
-Pasture -raised egg is important here. Because we’re not cooking the egg all the way through, you want an egg that comes from hens raised in a clean and natural environment (pasture) eating its natural diet. Eggs from hens that are packed into cages are uncleanly and poor quality.
-Grass fed butter is nutritionally more dense than regular butter, because cows that are grass fed (their natural diet), creates a butter that has a normal omega 3 to omega 6 fatty acid ratio.
-I use Redmond sea salt because of its high mineral content and because it doesn’t use any additives or pollutants.
