Garlic Dijon Aioli

Aiolis and dressings are the best way to make your meals more interesting and exciting. This aioli is my go-to because it goes with almost anything and is simple and easy to make with ingredients you likely have in your kitchen already. 

Use this aioli to dip fries, sweet potatoes, brussels sprouts or other veggies or put it on top of a burger, steak or chicken. The flavors are so versatile. I love to make aiolis and dressings at the beginning of the week and keep in the fridge to grab anytime I want to add something to my meals throughout the week.

Try this aioli on top of my spinach and feta turkey burgers

INGREDIENTS

2 cloves of garlic, minced

2 turns of the pan of olive oil

½ cup mayo

1 teaspoon dijon mustard

½ lemon, juiced

Salt and pepper to taste

METHOD

  1. Drizzle olive oil in a pan over medium heat. When warm, add the minced garlic.
  2. Saute for 3ish minutes, watching and stirring to make sure it doesn’t burn
  3. When fragrant and slightly golden, scrape garlic and olive oil into a small dip bowl or small mason jar
  4. Combine the rest of the ingredients, adding the salt and pepper last to taste
  5. You can serve immediately, but it’s best when the flavors have been combined for 2+ hours. 

Serving suggestions: Serve with burgers, grilled sausage, chicken, brussels sprouts, potatoes etc.
